Cut the turkey fillet into small pieces (resembling slithers) and sauté in a pan with the heated olive oil and butter
Add the onion, garlic and mushrooms and cook until soft and supple
Add the cognac to this (it will flare up in flames) and then put out the flames with the wine. Simmer this mixture for an extra 1-2 minutes
Add the stock, the cream, the leek and the peppers and continue to simmer for another 5-6 minutes
Add salt and pepper and serve on top of a plate of fresh warm vegetables
Tip: You can substitute the turkey fillet with chicken breast fillet (Wellgoods) in this recipe.
