 4 trout fillets (Wellgoods) - degutted and cleaned
 4 tbsp olive oil
 4 tbsp butter
 4 tbsp lemon juice
 4 tbsp ground almonds (peeled)
 45 tbsp flour
 Warm vegetables of your choice

Heat the butter and olive oil in a large frying pan
Coat the fish in the flour and lightly fry
When the fish is cooked through remove from heat and sprinkle with lemon juice and the ground almonds
Serve the fish with a variety of vegetables of your choice and pour over a little of the butter/olive oil mixture
Accompany with fresh lemon slices

Tip: Trout (Wellgoods) can be deboned and then cooked using various cooking methods.
