Salad with Tempura Fish Fillet Recipe

 4 medium sized cod fillets (Wellgoods)
 1 cup flour
 1 tbsp sesame seeds
 1 small coffee cup beer
 1 garlic clove mashed
 Vegetable oil for frying
 Mixed greens for salad
 12 cherry tomatoes halved
 1 small coffee cup olive oil
 4 tsp balsamic vinegar
 Salt and pepper to taste

Prepare the batter using the flour, beer, sesame seeds, garlic, salt and pepper
Cut the cod fillets into thick slices and dip in the batter
Heat the vegetable oil and fry the cod until golden brown
In a bowl, mix the salad greens with the olive oil and balsamic vinegar
Portion the salad into 4 servings and add cherry tomatoes
Serve the salad with the fish still warm

Tip: Cod (Wellgoods) can also be baked, shallow fried, poached and boiled.
