 16 medium sized prawns (Wellgoods) without the shell and with heads still intact
 1 cup small coffee cup olive oil
 ½ onion finely chopped
 1 clove garlic finely chopped
 2 ripe tomatoes finely chopped
 1 tbsp tomato paste
 4 tbsp ouzo
 4 tbsp dry white wine
 1 tsp finely chopped parsley
 1 tbsp dry oregano
 1 cup crumbled feta cheese

Add the oil to the pan and sauté the prawns until golden
Add the onion and garlic to this and allow them to soften and brown
Pour in the ouzo (this will fl are up) and wine (this will reduce the flames)
Add the tomato paste, chopped tomatoes, herbs, salt and pepper
Place the prawns in equal portions in clay pots, add the crumpled feta cheese evenly on top of each pot and cook in preheated oven at 180°C for 6-8 minutes
Serve with salad of your choosing

Tip: Prawns (Wellgoods) can be found in many sizes and they may be cooked in a pan, on the grill or even boiled
