Boil the octopus with the vinegar until it softens up
Drain the octopus and cut each tentacle from the body of the octopus
Lightly wilt the collards in a pan with a little olive oil. Add the boiled black eyed beans and add salt and pepper to taste
Place the octopus tentacles in a clean pan, add a few drops of olive oil and thyme and lightly sauté for a few minutes
Pour the honey, orange juice, chilli pepper over the octopus and allow to boil until the sauce starts to thicken up
Serve the octopus over the beans and add honey/chilli sauce on top
