 4 g beef fillets (Wellgoods) about 200-250g each
 4 cherry tomato stalks
 1 tbsp olive oil
 Variety of steamed or boiled vegetables (your choice)
 4 bunches frisee lettuce
 2 cups red wine – Mavrodaphne
 23 cubes cold butter
 Sea salt and pepper to taste

Heat a grilling skillet or the oven grill well, salt and pepper the fillets and sear both sides according to how well you like the meat cooked (medium, well done etc)
Place cherry tomatoes in a baking tray and add olive oil, salt and pepper and cook at 100°C for 15-20 minutes or until they become tender
Heat the wine in a small pan and allow it to slowly evaporate and reduce. Remove from heat and mix in the butter
Serve the fillets with the mixed vegetables, roasted cherry tomatoes and wine sauce
Garnish each beef fillet with a handful of frisee lettuce

Tip: Enhance the taste and appearance of the beef fillet (Wellgoods) by avoiding too much cooking and by complimenting the
flavours with herbs and spices.
