 12 degutted whole calamari (Wellgoods) cleaned
 4 tbsp olive oil
 2 tbsp coconut milk
 ½ red chilli pepper finely chopped
 ½ tsp saffron
 1 tbsp lime lemon juice
 Salt and pepper to taste

Combine all ingredients together and marinate the calamari overnight, in the refrigerator
On the next day, remove the calamari from the marinade and spear it through cooking sticks (like the ones used for souvlakia) or lemongrass shoots. Cook the calamari in the oven for 15 minutes at 180°C
While the calamari is cooking, place the marinade in a pan and heat well
Serve the calamari with fresh salad and drizzle the warm marinade on top

Tip: You can also combine other types of fish / shellfish (Wellgoods) with calamari to make grilled fish souvlakia.
