Method of Preparation
Heat the olive oil in a pan and sauté the onion, garlic and mushrooms
Add the wine and simmer until the wine has reduced
Add the tomatoes, carrot, tomato paste, salt and pepper and simmer until all the ingredients have blended together. Add the basil right at the end
Place the spaghetti in a bowl and add the sauce. Mix well so that the sauce covers all the spaghetti
For the fish, heat the vegetable oil in a pan and fry the fish fillets until they become a golden brown colour
Serve the fish fillets on top of the spaghetti
Tip: The large portions of breaded cod (Wellgoods) can be cut into smaller portions for appearance.
